- Method: Heat up Using Oven: the oven at 350°F (175°C) Use parchment paper on a large baking sheet so the cookies will not stick.
- Mix Wet Ingredients: In a large mixing bowl, mash bananas very well. Add the nut butter, maple syrup, egg, and vanilla. Mix this all until combined, and smooth.
- Add Dry Ingredients: Oat flour, flaxseed meal, ground cinnamon, baking soda, and salt to the wet mixture. Gently mix until the ingredients are barely combined. Gently stir in rolled oats, hemp hearts, chia seeds, chocolate chips, and walnuts, if using. Let the dough rest for about 5 minutes until slightly thickened.
- Drop the cookies: Using a large cookie scoop, portion 3 tablespoons for each cookie, and drop onto the prepared baking sheet, with about 2 inches between each mound. Lightly press some extra chocolate chips into the tops for garnish.
- Bake: Transfer the baking sheet to the oven; bake for 10 to 14 minutes, until the edges of the cookies are set but the centers are still soft. Just be careful not to overbake so that the cookies remain tender.
- Cool: Transfer the cookies to the oven and then dust them lightly with flaky sea salt while still warm. Let them cool on the baking sheet for 5 minutes, then move to wire rack to cool completely.
