Ingredients
  

  • 1 cup milk
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 2 tablespoons vegetable oil or melted butter
  • 1 1/4 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • A pinch of ground ginger
  • A pinch of ground cloves

Instructions
 

  • In a large bowl, combine the all-purpose flour, brown sugar, baking powder, salt, cinnamon, nutmeg, ginger, and cloves. Whisk the mixture thoroughly to ensure the spices are evenly distributed.
  • In a separate medium-sized bowl, whisk together the milk, pumpkin puree, egg, and vegetable oil until smooth.
  • Gradually incorporate the wet ingredients into the bowl with the dry mixture. Stir gently until the batter is just combined; slight lumps are acceptable and contribute to the pancakes' texture.
  • Heat a lightly greased skillet or griddle over medium heat. Once heated, pour 1/4 cup of batter onto the cooking surface. Cook until bubbles begin to form on the pancake’s surface, then carefully flip it and cook the opposite side until golden brown. Repeat this process with the remaining batter, greasing the surface as needed.
