  • 8 bone-in skin-on chicken thighs
  • ¼ cup white miso paste
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon freshly grated garlic or garlic paste
  • 1 teaspoon freshly grated ginger or ginger paste

Method
 

  1. Begin by preheating the oven to 400°F (200°C). Prepare a 9x13x2-inch baking dish by lightly coating it with cooking spray. Using paper towels, pat the chicken thighs thoroughly to remove any surface moisture, which will promote even browning and crispness.
  2. In a large mixing bowl, whisk together the white miso paste, honey, rice vinegar, soy sauce, garlic, and ginger until the mixture is smooth and cohesive.
  3. Add the chicken thighs to the bowl, ensuring each piece is generously coated with the marinade. Massage the mixture gently into the meat, then allow the chicken to rest for 10 minutes to absorb the flavor.
  4. Transfer the marinated chicken thighs to the prepared baking dish, arranging them skin-side up. Use a pastry brush to apply any remaining marinade over the top for an intensified flavor profile.
  5. Place the dish in the preheated oven and roast for 35 to 40 minutes, or until the internal temperature of the thickest part of the chicken reaches 165°F (74°C), indicating it is fully cooked.
  6. Remove the chicken from the oven and allow it to rest for several minutes to preserve its moisture. Serve warm with accompaniments of your choice.
