Mince Pie Baked Oats

A breakfast delight for the start of the day to be cozy. For another flavor variation, you could all the mincemeat for cranberry sauce and the figs for orange zest.

Ingredients
  

  • 100 g gluten-free oats
  • 1 tsp gluten-free baking powder
  • ½ tsp ground cinnamon plus extra for dusting
  • 2 medium eggs
  • 2 tbsp maple syrup
  • 100 ml milk
  • 75 g dried figs chopped
  • 3 tbsp mincemeat*
  • 4 tbsp Greek yogurt to serve

Method
 

  1. Start by preheating the oven to 180°C (fan 160°C, gas mark 4) and greasing two small baking dishes or large ramekins. Process the oats in a blender to a flour. Then, stir in the baking powder, cinnamon, eggs, maple syrup, and milk. Finally, blend until smooth and combined.
  2. Add the chopped figs and 2 tablespoons of the mincemeat and stir in. Divide the mixture between the prepared baking dishes, then top with the remaining tablespoon of mincemeat. Cook in the oven for about 25 minutes, or till oats are nicely puffed and golden. When ready, serve warm, with a swirl of Greek yogurt and a sprinkling of cinnamon. 😃 Make sure the mincemeat is vegan and/or glutenfree when appropriate.
