GREEK CHICKEN SALAD

A wholesome and vibrant dish, this Greek chicken salad is layered with crisp vegetables, savory toppings, and tender baked chicken. Finished with creamy avocado and a drizzle of Greek dressing, it makes a nourishing choice for either lunch or a light evening meal.

Ingredients
  

  • For the Salad
  • 1 large cucumber diced
  • 1 green bell pepper diced
  • 1 pint cherry tomatoes chopped
  • ½ red onion thinly sliced
  • ½ cup kalamata olives sliced
  • 4 ounces feta cheese cubed
  • 1 avocado peeled, pitted, and diced
  • 1 recipe Greek salad dressing
  • For the Baked Chicken
  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • ½ teaspoon paprika or smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon dried thyme
  • ½ teaspoon dried parsley
  • Salt and black pepper to taste

Method
 

  1. Preheat the oven to 425°F (220°C). In a small bowl, combine all dried herbs and paprika. Coat the chicken breasts evenly with olive oil, then rub the seasoning mixture over both sides.
  2. Place the chicken in a baking dish and cook for 20–25 minutes, turning once halfway through, until fully cooked and golden. Allow the chicken to rest for several minutes before slicing.
  3. While the chicken bakes, combine the cucumber, bell pepper, cherry tomatoes, onion, olives, and feta in a large mixing bowl. Drizzle with the Greek dressing and toss until well coated.
  4. Divide the salad among serving bowls. Arrange the sliced chicken on top of each portion and garnish with diced avocado before serving.
