Use a second bowl to mix flour, sugar, salt and baking powder. Add the dry ingredients to the wet in batches, mixing gently, just until incorporated—in the case of pancake batter, you want to take care not to overmix, since this affects fluffiness.
Heat a skillet or griddle over medium heat, lightly spraying with cooking spray. For each pancake, drop about 1/3 cup of batter onto the skillet.
When bubbles start rising to the surface of the batter, flip the pancakes, cooking the other side until golden brown and thoroughly cooked through.
