German Oven Pancake

This German Oven Pancake is a twist on the classic breakfast dish with a light, airy texture and crispy golden-brown edges. Its billowy fluff and captivating look makes a dish that is bound to impress any breakfast spread.

Ingredients
  

  • 3 large eggs
  • 1/2 cup milk
  • 1/2 cup all-purpose flour
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 3 tablespoons unsalted butter melted, divided

Instructions
 

  • Heating the skillet: This step helps to ensure that the skillet is hot enough before baking your dish; Preheat to 450°F (232°C).
  • In a medium bowl, whisk together the eggs, milk, 2 tablespoons of the melted butter, sugar and salt until completely combined. Sift in the flour gradually, mixing lightly until the ingredients are barely combined. Note that you should not overmix or the pancake's light and fluffy texture will be lost.
  • Heat a 9- or 11-inch cast-iron skillet in the oven for a minute. Once hot, add the remaining 1 tablespoon of melted butter to the skillet, swirling to coat the bottom evenly.
  • Gently pour the batter into the hot skillet. Bake for 12 to 18 minutes, or until the edges are golden brown and start to crisp up.
  • Baked, take the skillet from the oven and serve it right away, topped with whatever your heart desires.
