Ingredients
  

  • 1 pound sausage or breakfast sausage
  • 3 large eggs lightly beaten
  • 3 cups cooked white rice
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/2 cup of diced green bell pepper
  • 2-3 tablespoons soy sauce or more to taste
  • Scallions sliced (for garnish)
  • Everything bagel seasoning for serving

Method
 

  1. Start by heating a large frying pan or wok over medium-high heat. Add the sausage and cook, breaking it up as it browns, until no longer pink. Once fully cooked, use a slotted spoon to transfer the sausage from the skillet, leaving the rendered fat in the pan.
  2. Return the same skillet to the heat, adding the chopped onions and bell peppers. Sauté for 5-7 minutes until the veg gets tender and fragrant.
  3. Move the vegetables to one side of the skillet. Scramble the eggs until cooked through and not runny, then pour in the beaten egg in a well made in the cooked ingredients. When the eggs are done, stir them into the vegetable mixture.
  4. Return the cooked sausage to the skillet and add the cooked white rice. Combine it all until mixed well.
  5. Pour the soy sauce over the rice and stir to combine. Allow to heat throughout until everything is coated in the sauce.
  6. Top the fried rice with chopped green onions and a sprinkle of everything bagel seasoning just before serving.
