Ingredients
  

  • 2 cups rolled oats
  • 3 eggs lightly whisked
  • 1/2 cup milk of your choice
  • 1/2 cup  full-fat plain yogurt
  • 2 tablespoons butter or olive oil melted
  • 1/3 cup honey
  • 1/2 teaspoon vanilla extract
  • 3/4 teaspoon salt
  • 1 cup blueberries divided
  • 1 cup raspberries divided

Method
 

  1. Prepare the baking dish and heat the oven:

  3. Mix the ingredients:
  4. Add the rolled oats, milk, eggs, melted butter, honey, yogurt, vanilla extract and salt to a large mixing bowl. Mix the batter until incorporated and cohesive.
  5. Incorporate the berries:
  6. Fold in 3/4 cup blueberries and 3/4 cup raspberries. Evenly distribute the prepared batter into the greased or lined baking dish. Sprinkle the rest of the berries over the top for decoration.
  7. Bake the casserole:
  8. Move the dish to the preheated oven and bake for about 45 minutes. It should be glossy on the surface and firm to the touch when ready. Let it cool a bit before serving.
