- Begin by cutting the chicken breasts into evenly sized bite-sized pieces and transfer them into a mixing bowl.
- In a separate shallow dish, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, black pepper, and Italian herbs if using. Stir until the mixture is fully blended.
- Whisk the egg in a small bowl. Dip each chicken piece into the egg, allowing excess to drip off, then coat thoroughly in the breadcrumb mixture. Press gently to ensure the coating adheres. Repeat with all pieces.
- Preheat the air fryer to 400°F (200°C) for approximately 5 minutes to ensure even cooking.
- Lightly coat the air fryer basket with cooking spray or olive oil. Arrange the breaded chicken pieces in a single layer, leaving space between them to allow proper air circulation.
- Cook the chicken bites for 10–12 minutes, shaking the basket at the halfway mark, until golden and crisp. The internal temperature should reach 165°F (75°C).
- Remove the chicken bites from the air fryer and allow them to cool briefly before serving. Pair with your choice of dipping sauce.
