Ingredients
  

  • 8 large flour tortillas
  • 250 g cheddar cheese grated
  • 150 g chorizo finely chopped
  • 2 medium tomatoes chopped finely
  • 6 –8 spring onions finely sliced
  • 1 red chili  finely chopped (seeds removed if a milder flavour is required)
  • ½ small bunch of parsley  chopped finely
  • 1 lime juiced
  • Lime wedges for serving

Instructions
 

  • Preheat your air fryer to 180°C Into a large mixing bowl, add the grated cheddar, chorizo, tomatoes, spring onion, red chili and parsley. 2) It is then drizzled with lime and combined it all so it’s all incorporated.
  • Place the flour tortillas on a work surface and spread the filling evenly over half of each tortilla. Fold said tortillas over the filling, pressing down enough to seal the filling in and make it go to the edges without coming out.
  • Place the quesadillas in a single layer in the basket of the air fryer, and let them slightly overlap, if needed. Put a heatproof utensil on top to keep them from popping during cooking.   • Transfer to a plate, squeeze with fresh lime wedges and serve at once. Serve hot, it’s the best way to have them, in terms of texture and flavor.
